Due date vs. available until

I allow students to turn assignments in late for full credit, but I still want to give students a due date. Would it be possible to have both a due date and an available until date? Students would then be able to go in and see what needs to be done by a certain time, but I wouldn't have to change the dates to get accurate grades in the gradebook or open it up again for a student who did one attempt before the due date and is now locked out of it

If this is helpful... I make both the assigned date and due date the same but allow late submissions. This makes clear when it is due by. But I do wish an activity could show one date it's assigned and a separate date that it's due.
